Riz aux champignons

Basmati rice 2 cups

Mushrooms chopped 200 gms

Onion medium sized thinly sliced 1

Tomato medium sized chopped 1

Turmeric powder1/4 tsp

Red Chilli powder 1/2 tsp

Garam masala powder 1/2 tsp ( optional)

Bay leaves 1-2

Cloves 2-3

Cinnamon stick 1/2′’ piece

Olive oil 3 -4 tsps

Salt to taste

Cilantro for garnish

For spice paste-

Garlic 3 cloves

Ginger 1/2′’ piece

Green chilli 2

Clove 1

Cinnamon a tiny bit

Method:

Wash and soak rice in some water for 10 minutes. Grind the ingredients under spice paste with little water. In a pan heat oil add bay leaves, cinnamon, cloves . After a few seconds add the ground paste and saute for a minute and then add the chopped onion till golden brown. Then add tomatoes and mushrooms and saute for few minutes, add the spice powder and salt and saute again for 2- 3 minutes. Then drain the water from the soaked rice and add this to the mushroom curry and fry for 2 -3 minutes. Check for salt and chilli powder, if u need it be more hot add extra chilli powder. Pour it to a rice cooker or pressure cooker, add the required water ( i added 3 1/2 cups of water ) and cook. Garnish with cilantro. Serve hot with onion raita and potato chips or anything of your choice.
